Hot Honey Salmon with Cauliflower Cilantro Rice

I can hardly believe it’s been almost 2 years I’ve had this little space. I remember when my site first launched, I was filled with SO MUCH excitement, I loved the way it looked and how everyone that had a hand in creating it captured my vision. I started to notice a trend with my blog posts…they were all food. And my instagram? food. In college I wanted to start a food blog, I almost forgot until recently, my mom reminded me about the “logo” I sketched out. I think it was a fork and a dumbbell crossed in an X figure…and something any graphic designer would probably cringe at. It never came to fruition, probably for the best. Soon after I dove head first into fitness competitions and the most exciting thing about my food was the color of tupperware I packed it in. Fitness will always have an important place in my life but it will never be my life or define me. I see SO many women obsess over diets, they’re always cutting things out, adding things in, not eating after this time, not eating until that time, etc. I want to create a place where I can share healthy recipes and inspire you to foster a life centered around wellness and not being a number on the scale. So with that said, we’ll be closing up shop here soon and have a new home where there will be less pictures of me and more pictures of food! Food pictures are wayyyyy more exciting to look at anyways…I mean just LOOK AT this hot honey salmon.

It’s spicy. It’s sweet. A little nice and a little naughty. It’s leading you on, begging to be made.

Ingredients

Salmon

  • 4 (4-6oz) salmon filets
  • 2 cloves garlic, minced
  • 2 tsp. honey dijon mustard
  • 1 tsp. chile powder
  • 1 tsp. smoked paprika
  • 2 tbsp. honey (or maple syrup)
  • 2 tbsp. soy sauce or coconut aminos
  • 1/4 tsp. crushed red pepper flakes

Cauliflower Rice

  • 1 tablespoon avocado oil
  • 1/2 cup white onion, finely chopped
  • 1 large head cauliflower (about 2-3 cups riced)
  • 1 tbsp. vegetable stock
  • 2 tbsp. lime juice
  • lime zest
  • 1/4 tsp salt

Instructions

  1. Preheat oven to broil. Mix garlic, mustard, chile powder, paprika, honey, soy sauce and crushed red pepper flakes together in a bag or shallow dish. Let salmon marinate wile rice is being prepared.
  2. In a large skillet on medium heat, add oil and cook onions until translucent. about 5 minutes. Add riced cauliflower, vegetable stock, lime zest, cilantro and salt.
  3. Place salmon on a baking sheet lined with foil and brush/pour the marinade over filets (if your fish has skin don’t spray the foil with any oil and the fish should peel away when done). Place under broiler for 6-8 minutes depending on thickness.
  4. Continue cooking rice at a high heat to draw the moisture out, about 8-10 minutes. Remove from heat stir in lime juice, garnish with cilantro.
  5. Remove Salmon from oven and brush with any sauce left over. Serve and enjoy!
