Healthy Homemade Pizza Bites

pizza bagel bitesThese were actually an accident. Yes, I accidentally made pizza bites. Don’t act like you’ve never done it either, maybe after few too many uber rides and Miller Lites?  I was totally sober when I made these pizza bites though, so rest assured they are delicious.

I was making some homemade flatbreads to have on hand for pizzas and I had a little leftover dough. I popped a couple turkey pepperonis with a sprinkle of cheese, rolled it up and popped it in the air fryer. I handed it off to my husband and inquired where the rest of them were. Apparently you don’t serve up one pizza bite to a grown man and expect him to be satisfied. I had enough ingredients on hand to whip up a batch and within 15 minutes had a plate of hot and ready pizza bites…yea…wife harder than me. I made these in the air fryer but they’ll bake up just fine in the oven, just takes a little longer!

 

 

Ingredients

Homemade Pizza Seasoning

(I typically use Williams and Sonoma Pizza Boy seasoning, but when I don’t have that on hand I whip up a quick blend of the following)

1 1/2 tbsp oregano
1 tbsp dried basil
1 1/2 tbsp dried onion flakes
1/4 tsp dried thyme
1/2 tsp coarse sea salt
1/2 tsp crushed red pepper flakes
1/4 tsp garlic powder

Bites

1 cup all purpose or white whole wheat flour

1 cup plain greek yogurt

2 tsp. baking powder

20 slices turkey peperoni

1/4 cup mozzarella cheese

1 tbsp. melted butter

Instructions

  1. Combine all ingredients for pizza seasoning and set aside.
  2. Combine flour, greek yogurt, baking powder and 1 tbsp. seasoning mixture together. Mix lightly with fork until crumbly. Transfer dough to lightly floured surface and kneed briefly until dough is well formed.
  3. Divide dough into 10 even balls and individually roll out.
  4. In the center of each place 2 pepperonis and a pinch of cheese, cover and roll into a ball.
  5. Melt butter and brush each ball lightly. Sprinkle with remaining pizza seasoning.
  6. Preheat Air fryer to 360 and bake bites for 10 minutes or until golden brown*

*If using oven method bake at 350 for 20 minutes or until golden brown
