10 Mar Healthy Homemade Pizza Bites
These were actually an accident. Yes, I accidentally made pizza bites. Don’t act like you’ve never done it either, maybe after few too many uber rides and Miller Lites? I was totally sober when I made these pizza bites though, so rest assured they are delicious.
I was making some homemade flatbreads to have on hand for pizzas and I had a little leftover dough. I popped a couple turkey pepperonis with a sprinkle of cheese, rolled it up and popped it in the air fryer. I handed it off to my husband and inquired where the rest of them were. Apparently you don’t serve up one pizza bite to a grown man and expect him to be satisfied. I had enough ingredients on hand to whip up a batch and within 15 minutes had a plate of hot and ready pizza bites…yea…wife harder than me. I made these in the air fryer but they’ll bake up just fine in the oven, just takes a little longer!
Ingredients
Homemade Pizza Seasoning
(I typically use Williams and Sonoma Pizza Boy seasoning, but when I don’t have that on hand I whip up a quick blend of the following)
1 1/2 tbsp oregano
1 tbsp dried basil
1 1/2 tbsp dried onion flakes
1/4 tsp dried thyme
1/2 tsp coarse sea salt
1/2 tsp crushed red pepper flakes
1/4 tsp garlic powder
Bites
1 cup all purpose or white whole wheat flour
1 cup plain greek yogurt
2 tsp. baking powder
20 slices turkey peperoni
1/4 cup mozzarella cheese
1 tbsp. melted butter
Instructions
- Combine all ingredients for pizza seasoning and set aside.
- Combine flour, greek yogurt, baking powder and 1 tbsp. seasoning mixture together. Mix lightly with fork until crumbly. Transfer dough to lightly floured surface and kneed briefly until dough is well formed.
- Divide dough into 10 even balls and individually roll out.
- In the center of each place 2 pepperonis and a pinch of cheese, cover and roll into a ball.
- Melt butter and brush each ball lightly. Sprinkle with remaining pizza seasoning.
- Preheat Air fryer to 360 and bake bites for 10 minutes or until golden brown*
*If using oven method bake at 350 for 20 minutes or until golden brown
